🌿 1. Wild Garlic Pesto (No Cheese Option Available)
A vibrant, green pesto that’s perfect on pasta, bread, or roasted veggies.
Ingredients:
1 large handful of wild garlic leaves
30g nuts (pine nuts, walnuts, or almonds work well)
1 small garlic clove (optional, for a stronger flavor)
60ml olive oil
Juice of ½ lemon
Salt to taste
Optional: 2 tbsp grated hard cheese or nutritional yeast for a vegan version
Instructions:
Wash and roughly chop the wild garlic.
Blend all ingredients in a food processor until smooth.
Taste and adjust salt or lemon if needed.
Store in a glass jar in the fridge for up to a week.

Knead for 5 minutes. Let rest for 30 mins.

2–4 tbsp cold water (adjust for texture)
Instructions:
In a food processor, blend chickpeas, tahini, lemon juice, and wild garlic until smooth.
Add olive oil and garlic (if using), and continue blending.
Slowly add cold water a spoon at a time to get a creamy consistency.
Taste and adjust with salt and lemon juice as needed.
