From Field to Plate: My Spring Ritual with Healing Dandelion Greens
It was a beautiful spring day in Northamptonshire when I stumbled across a patch of golden dandelions in our local countryside park. I didn’t have my foraging kit with me at the time, so I made a mental note to return — and I’m so glad I did! On another sunny afternoon, I grabbed my foraging bag and set off to gather some dandelion leaves and flower heads for a fresh spring salad and some dandelion flatbreads to pair with a dip. 🍃🥗

Now that spring is in full swing, dandelions are at their peak — vibrant, flavourful, and absolutely full of goodness. This herbaceous perennial isn’t just a pretty face; it has a rich history of traditional medicinal use. Every part of the plant can be used to support the body:

Dandelion is known as a digestive tonic, helping to stimulate bile and digestive secretions. It’s ideal to enjoy before meals for a little digestive boost.

One way I love to enjoy dandelion greens is in a fresh wild green juice — it’s packed with bioavailable nutrients, live enzymes, iron, and chlorophyll for natural energy and gentle detox support.
